There are certainly ways to get wpa2-enterprise working.

Essentially it does require your phone to be rooted though. There's an app on the market called WifiHelper that will configure your wpa_supplicant.conf if you have a rooted phone. It pretty much just writes out the input you give it to /data/misc/wifi/wpa_supplicant.conf though -- so you have a wpa_supplicant that looks like:

Thanks for your helpful comments. I was not aware that the android market provides apps that only work on rooted phones. I dont have a G1 yet, but is this something that is made clear when you are downloading apps from the android market?
Regarding the wifi- it looks like i need to wait. I am not sure if I want to root the phones and screw up things in the process. But how difficult is it compared to unlocking an iphone (which I managed to do without much hassle)?

The android market does provide some apps that are for rooted phones only or provide additional functionality for rooted phones. You have to remember that the Android Market is much more open than the iphone appstore will ever be, thank god. You sound like you're an iphone convert like myself. It's generally made pretty clear in the app description or notes if it's something that is strictly for rooted phones, the WiFiHelper app for example I believe had parenthesis saying (FOR ROOTED PHONES ONLY) or something. There's not an overabundance of these apps out there though, so its likely not a big deal.
unlocking an iPhone or jailbreaking an iphone? They're pretty drastically different.
In all honesty I felt much more comfortable rooting my g1 than I ever did with my iPhone when I had it. Some of that can be contributed to me being more comfortable in the android environment but most likely the community is much more supportive than the iphone community.
As far as the ease...I'm a software developer for a living so I'm obviously a bit biased, but I think it's cake. I can root my phone now in probably about 15 minutes from start to finish if I'm being careful. It's essentially a RC29 downgrade, remounting the filesystem, flashing the recovery image, then you're able to install fresh rom's from your sdcard for your new OS. There are other things you can get into like fastboot and nandroid backups but they're not necessary and complicate things more than I'm interested in.

I'm dying for WPA2 Enterprise. I'm willing to root my phone. But then what happens when Cupcake is available? Will I be able to manually update my phone to the "Official" Cupcake build? Or will I be stuck with one of these other builds. I don't mind having to manually update my phone as long as the updates will be available.

If you want to keep root, you will have to stay with the modified versions, but these are very easy to install and JF has an updater for them.
We have been running cupcake for a month or two already with the modded roms!
Rooting will void your warantee, but you can go back to official roms.
You also can brick your phone, but apractically the only way to really brick it is to turn it off or have the battery go dead while it is flashing, so plug it into an outlet while flashing.

Bricking your phone refers to modding it in some manner (usually flashing) and screwing it up somehow (taking the battery out mid-flash, etc) thus rendering it completely unusable, and as useful as an actual clay brick
-- The portions of the memory that hold the firmware are a little more sensitive in that if you screw it up, you've essentially screwed up the portion of the phone that allows it to do anything at all..
